The Paserene Elements range highlights the playfulness of the winery and appeals to those who know when not to take themselves too seriously. The Rosie captures this in every way from the striking label art to the expressive fruit-forward character.

This alluring rosé is a blend of 80% Carignan, 17% Mourvèdre and 3% Syrah, sourced from Paserene’s farms in Tulbagh. This hot climate region of the Breede River Valley means the vines easily achieve ripeness while the cooling breeze from the south and attentive viticulture moderates the process to enable phenolic ripeness.

 

The Rosie enjoys a short period of skin contact that ensures the beautiful light-pink onion skin colour and is fermented in old French oak barrels. The nose is forward with fresh red cherries, strawberries and Turkish Delight rounding off the initial experience. There are also nuances of rose petals, cinnamon and a touch of cotton candy that adds depth to the nose.

The nose follows through to the palate which is balanced between the sweet cotton candy and the deep red berries all lifted by sour lime which points to the important acid structure. The mouthfeel is more textured and dense than you might expect with a velvety finish from the fermentation and ageing in old oak. The finish is long-lasting and invited you back for more.

The Rosie is a delight to drink on its own as an aperitif or while soaking up the sun, while the complexity of this wine makes it an ideal food wine. The depth of character enables it to pair with hearty roast chicken with loads of fresh herbs and a zingy cranberry sauce. It will also pair wonderfully with charcuterie, cutting through the rich cured meats or a decadent cheese board. A homemade aromatic butter chicken curry, with fragrant rice and fresh sambals, is a guaranteed crowd-pleaser.
