September heralds the turn of the seasons and the beginning of spring in South Africa with days starting to get longer and new growth everywhere you turn. At the Nest, Pasarene’s tasting lounge in picturesque Franschhoek, there is a buzz of anticipation in the air of exciting offerings.

The vines are starting to show signs of waking from their winter dormancy reaping the benefits of careful vineyard practices that ensure the best start to the growing season.

The Nest serves a cocktail perfect for this spring that is guaranteed to please, for those wanting to try this at home, here is the recipe for two.

Ingredients:

1 x Glass Rosie 2019
2 x shots of watermelon syrup
1 x shot of elderflower syrup
1 x shot of lemon juice
1 x shot lime cordial

Method:

Prepare two wine glasses by rimming with castor sugar and half full with fresh ice. Next, fill a large cocktail shaker with ice and add all the ingredients. Seal the shaker and shake for 30 seconds until well chilled. Strain into your prepared glasses until 3 quarters filled and top up with soda water and garnish with a maraschino cherry. Stir and enjoy.

September also celebrates SA’s rich cultural diversity on Heritage Day on the 24th, in the spirit of things, the Nest will be serving the Heritage platter all month with a selection of truly South African flavours to compliment your wine tasting. The tasty delights include snoek pâté, samosas, vetkoek, homemade grape jam and orange chutney, local biltong, droëwors, cheeses and olives with koeksisters for that quintessential sweet ending.
