Paserene’s Elements range captures the fun side of the estate with a collection of unique wines. This range demonstrates winemaker Martin Smith’s approach to curating a collection of vineyards and unifying the elements into handcrafted wines.  The range consists of two white and red wines as well as a rosé, let’s take a closer look at the Midnight.

This Cabernet Sauvignon is grown in the hot climate of Tulbagh. This region is found in the western corner of the Breede River Valley and enjoys hot days and cool evenings. The vines grow in decomposed shale, which combined with the climate enables wines with richly developed flavours, supple tannins, and long-lasting finishes.


The Midnight is a full-bodied red wine that is expressively fruit-forward on the nose. At first, you notice dark berries like black cherry and cassis with a hint of liquorice and vanilla. The nose follows through to the palate where the ripe berries are perfectly balanced with vanilla and a minerality bringing Old-World charm to this New-World wine. The ripe tannins are integrated and supply the backbone that ensures a long-lasting finish.

This shining example of Cabernet Sauvignon is an ideal wine to pair with a range of dishes from grilled meats to rich vegetarian meals. Consider having the Midnight with a barbeque or braai with a perfectly grilled ribeye and lamb chops. The charred flavours will perfectly match the smoky notes of the wine. The Midnight would easily accompany a rich vegetarian moussaka, a perfect winter warmer dish. For those long lazy meals, this Cab will effortlessly transition from mains to a cheese board of sharp mature cheddar and creamy blue with a black cherry and vanilla compote.
