Paserene Winter Newsletter 2019

The weather has turned and we are all embracing the winter chill. Here in the Franschhoek Valley we are enjoying the much needed rainfall whilst our vines are taking a well-deserved break. Each day as the wind grows stronger, the trees become bare, and we watch glorious droplets fall, we are reminded to slow things down, to seek comfort and warmth in the company we keep and the wines we share.

It may be bitterly cold outside but here in the tasting lounge, we are keeping things at a perfect temperature. With our fireplaces lit, it’s just the right place to snuggle in, enjoy our variety of wines and nibble on our decadent French-origin cheese platters.

The Paserene tasting lounge is open from 10h00 – 17h00, Wednesday – Sunday (Thursday by appointment). We look forward to welcoming you.

New Releases Coming Soon

In the Vineyard:

“In autumn we sowed plenty of oats in the Franschhoek vineyards. They are crucial for the light soil of our farm and have sprouted up nicely. Oats produce a lot more biomass than wheat and other more traditional cover crops, and we are looking forward to seeing the effects of that in the coming years. The vineyards in Tulbagh will not be seeded as those have their native weeds as cover crop, mostly fescue. In the coming weeks we will start pruning. We will also start to hammer in the trellis system for the Cabernet Sauvignon this month. It has now been two years since planting and we are ready to take the vines up the wire this year and get our first crop in 2021.

In the winery we are very busy getting ready for bottling. We will bottle the Shiner, Bright, Rosie and the Paserene Chardonnay 2018. As for the 2019 Chardonnay we will continue to stir it weekly and rack it to tank in December. The reds are in deep sleep until October when we will blend them.”

These limited and unique curated cases each contain 2 bottles of the 2013, 2014 and 2015 vintages, and sell for R4800 per case (20% members discount, usual price is R5760).
