How the wine is made

How the
wine is made

The wine is fermented in old oak and aged for just under two years with a portion of new French oak barrels.

Semillon Gris is a unique phenomenon in viticulture. Green grapes turn red one year, then back to green the next. The berries are initially pink or black and when they change color, they are known as Semillon Gris. They have a very heavy intensity in them, with much more character than normal Semillon grapes.

Semillon Gris has more longevity in a bottle, with a heavier feeling on the palate.

The grapes for our one-of-a-kind Shiner White are sourced from our Franschhoek vineyard. The Semillon Gris grows well in the sandy soil and moderate climates, and our Sauvignon Blanc flourishes in this moderate terroir.

Soils and climates

Soils and climates

Elgin is the coolest area with bokkeveld shale. It has a cooler climate which is best for full-bodied red wine, allowing the grapes to retain their bright acidity and full flavour.

Franschhoek is more moderate in climate and has sandy soil. It is ideal for fruit-focused white wines with a robust flavour, and the shadows of the mountains help to maintain the climate.

Tulbagh in the Breede River Valley has a hot climate that has cool evenings, with decomposed shale soil. The climate lends itself to wine that has richly developed flavours and long-lasting finishes.

To the eye, the wine demonstrates richness with flashes of brilliant green and gold. On the nose, the wine shows light tropical fruit opening up to lemon curd, earthy wet fur and enticing almond nuttiness. The nose offers additional layers with hints of French toast and a minerality of wet chalk. The fruit-forward nose follows through to the palate with a fine viscosity carried to a long and luscious finish by the elegant acidity.

Wine that doesn’t have a label is called a Shiner, and in South Africa, a shiner can also mean a black eye from a fight. This is the concept behind the label of The Shiner – a combination of wine knowledge and a thrilling story written by our winemaker.

Each time we release wine under the Shiner banner, it will be accompanied by a booklet covering the story of the lead characters of the wine. Each different wine will have the successive chapter attached to the bottle. The man on the bottle is the pivotal character of this story.

The second chapter (our Shiner White) is about the leading lady in the book. It is an exciting progressing story, as it is with the wine.

Grilled pork and chicken with tomato-based sauces are also fantastic choices for the freshness of the Sauvignon Blanc. Briny, fresh oysters and scallops sprinkled with dill and coriander will not go amiss with a crisp glass of this wine.
